Honey chocolate Mousse
Ingredients:
350g dark chocolate
3 metric cups [750ml] cream
5 dessert spoons honey

How to make:

Combine the chocolate, broken into pieces, the honey and 3/4 cup of cream over a barely simmering water bath. Stir until chocolate has just melted and combined with the cream and honey. set aside to cool. While the mixture is cooling, whip the remaining 2 1/4 cups of cream to not quite firm, but a little more than soft peaks [this is exactly what Nigella have written in her book]. Gradually fold in the whipped cream to the now cooled chocolate mixture. pour into one serving bowl or individual bowls if preferred [this makes a generous amount] and refrigerate. If using one large serving bowl, the mousse will probably take a good 3 hours to set.

Greek Chicken
Ingredients:
100 grams feta
2 big tomatoes
10 pitted black olives
2 cloves garlic
4 [125g] chicken fillets
pinch of salt and pepper
1 aubergine / eggplant

How to make
Crumble feta and chop olives, mix. Cut pockets into chicken fillets and put in feta and olive mixture. Slice aubergine, tomatoes and peeled garlic cloves and put the slices into an oven dish. Put the chicken fillets on top. Sprinkle some salt and pepper. Bake at 200c for about 35-40 minutes or until the chicken is done and the vegetables tender.

Chocolate Chips Muffin Nigella LawsonSumber : Nigella Lawson

Bahan
250g tepung serbaguna
2 tsp baking powder
1/2 tsp soda bikarbonat
2 tbsp serbuk koko
175g gula kastor
150g coklat cip
250ml susu
90ml minyak sayur (75g mentega)
1 biji telur (L size)
1tsp esen vanila/ ekstrak vanila

Cara

Gaul tepung, baking powder, soda bikarbonat, gula dan serbuk koko dalam mangkuk besar.
Gaul rata minyak, susu, esen vanila dan telur dalam mangkuk lain.
Tuang bahan basah ke dalam bahan kering dan gaul rata.
Masukkan coklat cip dan gaul rata.
Tuang adunan dalam papercup dan tabur sedikit coklat cip di atas.
Bakar pada suhu 200C untuk 20 minit.

Chocolate Chips Muffin
Bahan:
2 cwn tepung serbaguna / tepung gandum
3 tsp baking powder
1/2 tsp garam
1/4 cwn gula
1 biji telur (dipukul)
1 cwn susu (UHT / susu segar)
6 tbsp shortening dicairkan (saya guna mentega)
1 cwn chocolate chips (saya guna lebih)

Cara:
1. Gaul tepung, baking powder, gula dan garam sehingga rata.
2. Gaul mentega, telur dan susu sehingga sebati.
3. Campurkan bahan di 1. ke dalam bahan di 2. dan gaul sehingga sebati.
4. Masukkan chocolate chips dan gaul perlahan-lahan sehingga rata.
5. Masukkan adunan ke dalam papercup 3/4 penuh (susun papercup dalam muffin tray) dan tabur chocolate chips di atas.
6. Bakar pada suhu 190C selama 15-20 minit.


Lemon Cream Cheese Cupcakes

Makes 12 cups

Ingredients:
130g cake flour
½ tsp baking soda
½ tsp baking powder
125g cream cheese, at room temperature
135g butter, at room temperature
145g castor sugar
1 tsp grated lemon rind
2 nos. medium (Grade B) eggs, at room temperature
1 tbsp lemon juice

Lemon glaze:
40g icing sugar, sifted
1 tbsp lemon juice
12 large paper cups

Method:
1. Line muffin pan with paper cups.
2. Sift cake flour, baking soda and baking powder into a mixing bowl. Set aside.
3. Cream butter and cream cheese until light and creamy for 8-10 minutes.
4. Add castor sugar and continue to mix until light and fluffy.
5. Beat in eggs, one at a time. Stir in lemon rind and lemon juice.
6. Finally, fold in sifted flour in (1).
7. Divide batter evenly into paper cups. Bake in preheated oven at 200 degC for 40 minutes (Note 1).
8. Remove the pan from the oven. Rest for 10 minutes before removing the cupcakes from the pan (Note 2). Cool on wire rack. (Note 3)
9. Meanwhile, prepare lemon glaze. Heat lemon juice in microwave on high for 15 seconds. Pour into sifted icing sugar and whisk till smooth.
10. Fill lemon glaze into a piping bag and use a writing nozzle to pipe the glaze onto cupcakes. Decorate with lemon zest and other decoration of your choice. Chill before serving.

Notes:
I was using gas oven which required 40 minutes baking time at 200 degC. For conventional or convection oven, please reduce temperature by 20-25 degC and baking time should be adjusted to 20-30 minutes in total.

The cakes are too soft to be moved yet.
The cheese cupcakes are expected to shrink a little after cooling.

Big And Special Event

A big event is coming soon. With all this big grand discount here and there in store not to mention school holiday is coming up, all the shop would be full pack with people. People would be sure busy buying things for this up coming celebration. That include me too. I hardly could wait. Not to mention my baby is getting better and well. She herself now. Sour Cream Coffee Cake with Chocolate Mocha Swirl

INGREDIENTS (Nutrition)

  • 8 ounces NESTLE CHOCOLATIER™ 53% Cacao Dark Chocolate Baking Bar, coarsely chopped, divided
  • 1/4 cup milk
  • 1/4 cup NESCAFE® TASTERS CHOICE® 100% Pure Instant Coffee Granules
  • 1 cup toasted hazelnuts, chopped
  • 1/3 cup granulated sugar
  • 2 tablespoons butter
  • 3 cups all-purpose flour plus
  • 2 tablespoons all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon baking powder
  • 2 cups granulated sugar
  • 1/3 cup butter
  • 1 cup sour cream
  • 3 large eggs
  • 3/4 cup milk plus
  • 2 tablespoons milk
  • 1 1/2 teaspoons vanilla extract

DIRECTIONS

  1. Preheat oven to 350 degrees F. Grease and flour 13 x 9-inch baking pan.
  2. Melt 3/4 cup chopped baking bar in small, uncovered, microwave-safe bowl on HIGH (100%) power for 45 seconds; STIR. Pieces may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until smooth. Cool to room temperature.
  3. Microwave 1/4 cup milk and coffee granules in small, uncovered, microwave-safe bowl on High (100%) power for 15 seconds. Stir mixture with whisk until coffee granules are dissolved. Cool to room temperature.
  4. Combine nuts, remaining chocolate, 1/3 cup granulated sugar and 2 tablespoons butter in medium bowl until crumbly.
  5. Combine flour, baking soda, salt and baking powder in medium bowl. Beat remaining 2 cups granulated sugar and remaining 1/3 cup butter in large mixer bowl until well blended. Beat in sour cream, eggs, remaining 3/4 cup plus 2 tablespoons milk and vanilla extract until blended. Gradually beat in flour mixture. Remove 3 cups batter to medium bowl. Stir in melted chocolate and coffee mixture. Pour chocolate batter into prepared pan.
  6. Drop tablespoons of remaining batter randomly over chocolate batter. Swirl mixture with knife for marbled effect. Sprinkle nut mixture over top.
  7. Bake for 38 to 40 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack.
Chocolate Chip Cheesecake

NGREDIENTS (Nutrition)

  • Crust:
  • 1 1/2 cups crushed chocolate sandwich cookies
  • 2 tablespoons butter or margarine, melted
  • 2 cups NESTLE® TOLL HOUSE® Semi-Sweet Chocolate Mini Morsels, divided
  •  
  • Filling:
  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • 3/4 cup NESTLE® CARNATION® Evaporated Milk
  • 1/2 cup sour cream

DIRECTIONS

  1. Preheat oven to 300 degrees F.
  2. Combine cookie crumbs with butter in medium bowl until moistened; press onto bottom of ungreased 9-inch springform pan. Sprinkle with 1 cup morsels.
  3. Beat cream cheese, sugar and vanilla extract in large mixer bowl until smooth. Beat in eggs and flour. Gradually beat in evaporated milk and sour cream. Pour over crust. Sprinkle with remaining morsels.
  4. Bake for 25 minutes. Cover loosely with foil.
  5. Bake for an additional 30 to 40 minutes or until edge is set but center still moves slightly. Place in refrigerator immediately; refrigerate for 2 hours or until firm. Remove side of springform pan.

FOOTNOTE

Cheesecake may be baked in 13 x 9-inch baking pan. Prepare as above. Bake in preheated 300 degrees F. oven for 20 minutes. Cover loosely with foil. Bake for an additional 20 to 30 minutes.

Blueberry Coffee Cake
1 cup margarine, softened
11/2 cups granulated sugar
2 large eggs
1 cup no-fat sour cream
1 tablespoon vanilla extract
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 (21 ounces) can COMSTOCK® or WILDERNESS® More Fruit Blueberry Fruit Filling or Topping
 
Cake Topping:
1/2 cup granulated sugar
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
  1. Preheat oven to 350°F (175°C). In large mixing bowl, combine margarine, sugar, eggs, sour cream and vanilla. Mix until well blended. Add flour, baking powder and salt; mix just until combined. Spread half of batter in the bottom of a greased 9" x 13" pan. Top with blueberry fruit filling and then remaining batter.
  2. For topping: In small bowl, combine sugar, brown sugar and cinnamon; sprinkle over top of coffee cake. Bake for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool; cut into squares.

Makes 20 servings. Prep time: 25 minutes.

Butterfinger® Cake

1 prepared angel food cake, crumbled
1/2 cup butter
4 large egg yolks (see Food Safety)
2 cups powdered sugar
1 teaspoon vanilla extract
1 (16-ounce) container whipped topping
8 (2.1-ounce) Butterfinger® candy bars
  1. Crush Butterfinger® candy bars (while still in wrappers ) using a rolling pin.
  2. Cream butter, egg yolks, sugar and vanilla. Stir in whipped topping.
  3. Layer a 13 x 9 x 2-inch pan with half the cake crumbs; next layer with half the creamed mixture, then sprinkle with half the crumbled Butterfinger® candy. Repeat in same order with last half of ingredients.
  4. Chill for at least an hour before serving.

Makes 12 to 16 servings.

Note: Freezing the candy bars an hour before crushing helps keep the chocolate "firm" for crumbling.

Still coughing

I took my baby to the clinic. They gave her some medicine but it didn't work. She is coughing vigorously and cry when she did. Comfort her doesn't help but play with her seem to calm her down. The only thing that the medicine do was making her sleepy and that just basically it. I hope she get better soon because I'm worry about her.

Qilah is sick

I didn’t get enough sleep last night. My baby was coughing all the night long. She hardly could sleep. I was worry about her. I try comforting her so she could go back to sleep. It takes time but at last she fall asleep. I keep on checking her to make sure she sounds asleep. I don’t care for my beauty sleep because my baby is more important then that. I am going to take her to the clinic today to get some medicine. I hope she be getting better.

It's my baby birthday today.

I'm so thrill. My baby today is 1 yrs old. How time goes by so fast. Just imagine, she was a tiny baby, fragile and cute. Now, she big not to mention heavy and also cute. She's now learning to walk without anyone helps. But I'm  always close by to make sure she would hurt herself. She like to scream so much just to see how loud she could go. She always do that when she is  so happy or excited. But now she tends to be in a rage when things don't get in her own way. Will she just a baby. We going to have a small function to celebrate her birthday to night. To mark her 1ST BIRTHDAY.

Leg cramp: Home remedies

If you have leg cramp you can try some of this remedies here which I got from the net to see if it can help to ease the pain.

Diet rich in potassium and calcium:

  1. Increase water consumption throughout the day to keep well hydrated.
  2. Potassium and calcium rich foods will keep the level of these two much required nutrients at optimum levels which preventing the cramping episodes.
Stay well hydrated during work

Some preventive measures are:

  1. Dehydration can cause leg cramps. It very important to stay well hydrated during workouts. So drink plenty of fluids before, during and after excercising.
  2. Stretching prior to starting any excercise routine is extremely important. Cause stretching help to relax muscles and thus prevent leg cramps. When beginning a workout regime, it is imperative that you do some stretching first gradually. Any sudden increase or changes in physical activity levels can cause leg cramps.
  3. Rolled up bed sheets or blankets at the feet to prevent toes and feet from pointing downward while sleeping.
  4. Riding a stationary bicycle for a few minutes before bedtime can prevent leg cramps from developing during the night.

What do I do when I have leg cramp

What to do when you get a leg cramp? 
Try massaging the muscle. I got this from the net on how to deal with leg cramp. I don't know whether or not it will help though.
Try by stretching the sore muscle, do follow your instinct, cause your body will automatically guide you in the correct manner. Do massage the cramped muscle gently in the natural direction of the muscle. This actually helps to relax the contraction and ease the pain. Having a hot shower or warm bath is a good way to relax the muscle too. You could aslo use a cold packs on the affected muscle. This help to relax the tensed muscles. For  a cramped calf muscle, try stretch and massage the leg by straightening it and pointing the toes upward, towards the head. You could also use a warm towel or heating pad to alleviate pain or tenderness following to a cramp.

Leg pain or cramp

To know what cause leg pain is actually difficult to understand. The exact cause of a leg cramp is extremely difficult to pinpoint, some of the factors leading to the same are as follows -


  • Muscle fatigue due to overexertion
  • Rigorous exercises
  • Dehydration
  • Excess weight
  • Electrolyte, hormonal or fluid imbalances
  • Side effects of certain medicines such as diuretics.
  • An unusual or a different exercise than what is done normally.
  • Diminished blood supply.
  • Nerve abnormalities.
  • Nerve and muscle diseases.

 

A sharp leg pain

For the past few days, I am having leg pain. My upper right leg is so painful that I ask my sister to massage them because she is such a good massager. Sometime my leg just gets cramp. When I recall back, I remember of having this kind of pain and when I was pregnant with my first baby. Maybe I’m pregnant but who knows. If I am pregnant, I being thrill. But I don’t want to get too excited about it. Have to check to make sure.
